Grilled Veggie and Juusto Burgers

Ingredients

  • 1 small eggplant, cut into 1/2 inch slices
  • 1 medium sweet red bell pepper, cut into 1/2 inch strips
  • 2 tablespoons olive oil
  • Salt and pepper
  • 2 packages of Juusto Italiano Baked Cheese
  • 1/4 cup pesto
  • 4 pretzel buns, split and toasted

Directions

  1. Grease grill grate. Heat grill to medium.

  2. Drizzle eggplant and red bell pepper with olive oil in a large bowl; toss to coat. Transfer vegetables to a lightly greased grill grid.

  3. Grill vegetables, covered, over medium heat for 10-12 minutes or until tender, turning occasionally. Remove vegetables from the grill grid. Keep warm. 

  4. Arrange Juusto side by side on grill grid. Grill Juusto, covered, for 2-3 minutes on each side or until warmed through. Transfer Juusto to a cutting board; cut each slab in half.

  5. Spread pesto on buns; top with Juusto and vegetables.
